This is going to be a fast and furious post because I have to finish some revising of my book.

First off:

SALADS!

I want recipes! Low cal (low point salads). Any kind. If you love em, I wanna know about em. I want to do some kind of salad-a-thon where I try a million different kinds of salads to mix things up. If you know of a super awesome salad like Sheryl's (Bitch Cakes') Super Salad than I wanna know. Tell me the ingredients I will need (I will eat anything - I am allergic to nothing and have no aversions to any kind of meat/poultry or seafood) and if there is any special preparation, let me know about that too. After I try them all I will be choosing first, second and third place winners who will win prizes!

MINI ELLIPTICAL

I am getting rid of mine because with my new stationary bike and Lateral Thigh Trainer, I have no room for it. I bought it less than 6 months ago for $99 and as you can see, a percentage of the profit went to Breast Cancer Awareness. It is lightly used and can be used standing (as an elliptical is generally used) or you can turn it around backwards, sit down and use it as a make-shift stationary bike. IIt is very versatile and compact. Do you want it? If so, send in a fabulous salad recipe (under 500 calories please) The first place winner will have their choice of this or a yet undetermined gift card.

Applesauce thrills me. Yes it does.

It’s right up there with some of my all time favorite “go-to” sweet treats. I know you are probably thinking “What the heck is she talking about?” How about apple pie, layer cake, cookies, ooey gooey chocolate croissants? Duh, of course I love all that stuff. Can I eat those sweets everyday? Um no. I guess I could, but I am not gonna. I take pride in my lean physique and I work hard to maintain it. Day to day maintenance of high energy calories in and out (via exercise) are the key to keeping a great shape. I will take this opportunity to proudly mention again my “Most Athletic Camper” award at Camp BlogAway.


I love experimenting with different fruity combinations. My kids love my homemade applesauce too (thank goodness!) I suggest trying to make your own homemade applesauce. Make a Big Batch, it’ll last a long time. To be enjoyed at home or toss some in the daily lunch boxes.

As long as you have a bunch of fresh apples and other fruit (not necessary, but fun), a pot, water and a blender you are in business. Speaking of business, I should start canning this stuff. Think i’ll market it as “Liquid Gold.”

Homemade Mango Applesauce

8-10 servings. Assume about 4 oz per person.

  • Make what you need, this applesauce is great as is or inside baked goods, mixed into thick greek yogurt, parfaits and in your oatmeal. I love it alongside my favorite Stuffed French Toast.

  • My recipes serve as inspiration. Feel free to experiment with ingredients you have on hand. No stress. Just good, clean eats!

INGREDIENTS

  • 2-3 lbs Apples, cleaned, cored and cut into chunky pieces, keep the skins on (Granny Smith, Pink Lady & Fuji’s are my favorite)
  • 1 or 2 Mangos, cleaned, skin removed and cut into chunky pieces (You can use frozen Mango too)
  • 1 Tsp Vanilla Extract
  • a squirt of Lemon Juice
  • 1 Cup Water

Sweetener Choice: You can add extra sweetness to your applesauce or just leave it alone. A lot of sweetness will be determined up front depending upon what kind of apples you choose. From sweet Pink Lady’s to tart Granny Smith’s, what you work with will determine the overall sweetness. You can use a few different types of apples too. Just taste your applesauce when it is done cooking to see how much more sweeteness you want to add.

  • Stevia Drops or Powder
  • Maple Syrup
  • Agave
  • Raw Brown Sugar
  • Sucanat
  • Raw Honey

METHOD:

  1. In a medium saucepan combine apples, mangos, water, lemon juice and vanilla.
  2. Bring to a boil and then lower heat to a simmer.
  3. Simmer applesauce for about a 1/2 hour, stirring occasionally.
  4. Let applesauce cool for a few minutes.
  5. With ladle put applesauce in blender or food processor.
  6. Puree until desired consistency is reached. Add more water if needed.
  7. Enjoy!
